Roasted veggies – shown here are beets, parsnips, carrots & tomatoes all tossed with a little sea salt & olive oil, then roasted in the oven until tender. Serve the roasted veggies over some baby greens tossed with salt, EVOO & balsamic vinegar, then finish with shavings of parmesan & Basil Pesto.

A Piadina is a traditional Italian flatbread from Emilia-Romagna. It’s kind of like a flour tortilla. We used the recipe from Ilaria’s Perfect Recipes. You can substitute a flour tortilla if you like.
Make a 1 egg omelette to start, then slap that omelette on the warmed up flatbread or tortilla, top with fresh spinach, slices of fresh mozzarella, roasted tomatoes & a finishing drizzle of Basil Pesto. Fold & go!
